Recipe Ingredients for Smoked Salmon Scramble on Toast

4 slices Texas Toast, toasted
5 Eggs
1/2 c Milk
3 tbsp Fresh Chives, snipped
1/4 tsp Ground Black Pepper
1 Olive Oil Spray
4 oz package Smoked Salmon, thinly sliced, cut into bite sized pieces (oz)
1/2 c Shredded Swiss Cheese
1 tbsp Fresh Chives, snipped for garnish

Recipe Directions for Smoked Salmon Scramble on Toast

  1. Preheat broiler. Line a baking sheet with foil. Place toast on prepared sheet. Set aside.

  2. In a medium bowl beat together eggs, mile, 3 tablespoons chives and pepper with a whisk. Coat a large skillet with olive oil over medium heat. Pour in egg mixture.

  3. Cook over medium heat without stirring until mixture begins to set on the bottom and around edges.

  4. With a spatula or large spoon, lift and fold partially cooked egg mixture so the uncooked portion flows underneath.

  5. Fold in salmon. Continue cooking over medium heat for 1 to 2 minutes or until egg mixture is almost cooked through but still slightly soft.

  6. Evenly divide the egg mixture among the four toast slices. Top with the shredded cheese.

  7. Place under broiler about 3 inches from the heat for 2-3 minutes or until cheese is melted and just begins to turn brown.

  8. Remove from oven and top with additional snipped fresh chives, if desired.
