Yum. You can use half real eggs / half egg beaters if eating nearly 2 eggs in one meal freaks you out.

Recipe Ingredients for Smoked Salmon Egg Muffins

5 eggs
1 1/2 tbsp half and half
4 oz smoked salmon
6 tbsp red onion, chopped
4 tbsp chives, chopped
6 tsp feta, crumbled

Recipe Directions for Smoked Salmon Egg Muffins

  1. Preheat oven to 375.

  2. Whisk together eggs and half and half. Set aside.

  3. Lightly spray a non stick muffin tin with no stick spray. Layer onions, salmon, chives, and feta in 6 tins so that they are about 3/4 full.

  4. Evenly pour egg mixture into tins so that each cup is full to the brim.

  5. Place on a baking sheet and bake 25-30 minutes. Allow to cool 2 minutes before removing from tins.

  7. These freeze very well. Just allow them to cool completely before freezing. To reheat, allow to thaw overnight and nuke 30-45 seconds.
