A combination of smoked and leftover salmon that is yummy!

Recipe Ingredients for Smoked Salmon Casserole

1/2 cup sour cream
1/2 cup yoghurt, low fat
1/4 cup minced onion
1 1/2 teaspoons dill
1 teaspoon orange zest
1 teaspoon salt
2 egg whites
1 pound cauliflower, cut up
3 ounces salmon, smoked
4 ounces salmon, poached
1/2 cup parmesan cheese
1 tablespoon parsley flakes

Recipe Directions for Smoked Salmon Casserole

  1. Thoroughly combine the first 7 ingredients (sauce) in a mixing bowl. Add the cauliflower and salmon and mix well.

  2. Spray a 9 x 13 inch baking dish with cooking oil spray. Pour salmon mixture into baking dish. Flatten top and sprinkle with cheese and parsley over top. Bake for about 25-30 minutes at 350 F until heated through. Put under broiler for 1-2 minutes until topping becomes slightly browned.

  3. Enjoy!
