Recipe Ingredients for Smoked Paprika Pot Roast

3 pounds Chuck beef roast, fully trimmed of fat
3 cups carrots, chunks
1 onion, diced
14 oz tomatoes
1 tablespoon garlic
1 tablespoon paprika, smoked
2 potatoes, chunks
1 tablespoon olive oil
6 oz ale

Recipe Directions for Smoked Paprika Pot Roast

  1. Cut the chuck roast into big chunks in order to remove any interior fat. Use the leftover pieces to make some beef stock if you want.

  2. Brown the onion and garlic in the oil in a dutch oven. Add the smoked paprika and beef chunks to brown and season the meat.

  3. Add the ale, tomatoes and carrots. Bring to a boil. Add pepper and a bit of salt to taste. Reduce heat to low and simmer for 3 to 4 hours.

  4. Add the potatoes in the last 30 minutes or so, depending on how small you cut it up.

  5. Use slow cooker if you don't have a dutch oven.
