Smoked paprika turns this easy dish into a tasty chicken dinner.

Recipe Ingredients for Smoked Paprika Chicken

2 pounds skinless chicken breasts
2 large carrots, chopped
1 large onion, diced
1 tomato, crushed
1 bell pepper, diced
2 teaspoons smoked paprika
1 tablespoon garlic, diced
1 cup vegetable broth
2 tablespoons olive oil

Recipe Directions for Smoked Paprika Chicken

  1. Cut the chicken breasts into thirds and brown in the olive oil in a dutch oven for about 5 minutes each side. Remove and set aside.

  2. Chop up the onion and brown in the dutch oven. Add the other chopped/diced vegetables and saute for about 5 minutes.

  3. Add the smoked paprika, fresh ground pepper, dried basil and garlic. Stir in the crushed tomatoes and vegetable broth.

  4. Put the chicken back in the dutch oven, cover it and simmer on low heat for 1.5 to 2 hours.

  5. Serve over steamed brown rice.
