A delicious sauce with a full serving of veg and protein in a delicious, yet surprising sauce. You can substitute ground meat of any kind for the oysters. You'll lose the smokey flavor, but it will still be delicious.

Recipe Ingredients for Smoked Oyster Ragu

1 Serving Smoked Oysters (1 can)
15 Baby Carrots
1/2 Bell Pepper, any color
1 medium Onion
4 cloves Garlic
1 tablespoon Olive Oil (use the oil from the Oysters)
2 oz Tomato Paste
2 tablespoons Half and Half
1 cup Water

Recipe Directions for Smoked Oyster Ragu

  1. Chop the carrots, onions, and pepper in a food processor (a mini chopper) so they are a really small dice. Chop each one separately and set aside in bowels.

  2. Add half of the oil from the oysters to a sauce pan. You can add some olive oil if needed, but the veg should be liquid enough not to need it.

  3. Saute the onions in the oyster oil until they are half way to translucent, then add the carrots. Saute until soft.

  4. Add the diced pepper.

  5. Chop the smoked oysters not as fine as the vegetables, and add to the mix, including the rest of the oil from the can.

  6. Mix the water and tomato paste. Add to the sauce. Stir. Add the Half and Half. Stir.

  7. Simmer until flavors meld. Serve over Whole Wheat Pasta.
