Bobby Flay uses heavy cream. He says 3 medium sweet potatoes so I guessed at the weight.

Recipe Ingredients for Smoked chile Scalloped Sweet Potatoes

1 1/2 pound sweet potatoes
1 1/2 cup fat free half and half
2 T chipotle paste

Recipe Directions for Smoked chile Scalloped Sweet Potatoes

  1. Preheat oven to 375 degrees F.

  2. Whisk together cream and chipotle puree until smooth.

  3. In 9 x 9 casserole dish, arragne the potatoes in even layers. Drizzle with 3 tablespoons of the cream mixture and season with salt and pepper if desired. Repeat with the remaining potaties, cream and salt and petter to form 10 layers.

  4. Cover and bake for 30 minutes, remove cover and continue baking for 45 minutes to 1 hour, or until the cream has been absorbed and the potatoes are cooked through and the top is browned.
