Bean soup with smoked turkey sausage

Recipe Ingredients for Smoked Bean Soup

1 pound TURKEY SAUSAGE, SMOKED
1 tbsp GARLIC, RAW
1 ONION, SWEET, MEDIUM
1/4 cup KIDNEY BEANS
1/4 cup PINTO BEANS
1/4 cup BLACK EYE PEAS
1/4 cup NAVY BEANS
1/4 cup GREAT NORTHERN BEANS
1/4 cup LENTILS
4 cups CARROTS
2 cups CELERY
2 cups BEEF BROTH
2 tbsp WORCESTERSHIRE
2 tbsp LIQUID SMOKE
4 cups WATER
2 cup CABBAGE, SHREDDED
2 tbsp PAPRIKA
2 tbsp MARJORAM
1 tbsp OLIVE OIL

Recipe Directions for Smoked Bean Soup

  1. Add dry beans to a large cooking pot. Add water until water is 2 inches above beans. Let bean sit overnight.

  2. Saute diced onion and garlic in olive oil until onions are almost translucent. Add celery and sausage and saute for about two minutes. Add the balance of the ingrediants and bring to a boil. Once soup is boiling, turn down heat and simmer for 4 hours.

  3. Add more water to cooks delight. I like mine more on the stew side than the soup side.
