Recipe Ingredients for Smoked Andouille Chicken Sausage

1 large yellow onion, diced
3 large carrots, diced
3 celery stalks, diced
4 g bay leaves
8 oz red lentils
2 cups kale, coarsely chopped
28 oz Whole Peeled Tomatoes
6 cups low sodium chicken broth
2 tsp kosher salt
1/2 tsp ground black pepper

Recipe Directions for Smoked Andouille Chicken Sausage

  1. In large heavy pot, sprayed with cooking spray, add onions, carrots, celery and the bay leaves. Turn heat to medium low and acook the vegetables, stirring frequently, until very tender.

  2. Stir in the lentils,sausage, and kale. Add the tomatoes, crushing the tomatews with your fingers as you asdd them to the pot. Add the chicken stock, salt and pepper. Bring the mixture to a boil over high heat. Reduce the heat to low and simmer for 1 hour, covered , until lentils are tender. Stir and add more salt and pepper to taste, as desired. Serve in bowls.
