Smith Island cake batter modified using whole wheat pastry flour and splenda

Recipe Ingredients for Smith Island Cake batter

8 ounces unsalted butter
3 cups wheat flour
1/4 teaspoon salt
1 teaspoon heaping baking powder
2 cups splenda
5 large eggs
1 cup evaporated milk
2 teaspoons vanilla extract
1/2 cup water

Recipe Directions for Smith Island Cake batter

  1. Place oven rack in the middle of the oven and preheat to 350 degrees. Use butter to lightly grease 10 9-inch cake pans.

  2. Sift together flour, salt, and baking powder

  3. Mix together butter and sugar until light and creamy.

  4. Add eggs one at a time; beat until smooth. Reduce speed to low and add dry ingredients one cup at a time. Add evaporated milk, vanilla, and water until combined.

  5. Place 2/3 cup of batter in each greased cake pan, spreading batter evenly. Bake on middle rack for 8-9 minutes.

  6. Cake layers are finished when the sizzling is done. Once done, run a spatula around the edge of pan and east the layers out. Lay flat to cool. Ice when cool.
