Recipe Ingredients for Smashed Sweet Potatoes

4 pounds sweet potatoes
1/2 cup orange juice
1/2 cup cream
4 tbsp butter
1/4 cup brown sugar
1 tsp nutmeg
1/2 tsp ground cinnamon
2 tsp salt
1 tsp pepper

Recipe Directions for Smashed Sweet Potatoes

  1. Preheat oven to 375 degrees. Scrub the potatoes, prick them several times with a knife or fork, and bake them for 1 hour, or until very soft when pierced with a knife. Remove from the oven and scoop out the insides as soon as they are cool enough to handle. Place the sweet potato meat into the bowl of an eectric mixer fitted with the paddle attachment and add the remaining ingredients. Pour into a baking dish, top with brown sugar or apples.

  2. 3 tbls butter

  3. 3 apples, peeled, cored, and cut into eighths

  4. 3 tblsp light brown sugar

  5. Saute these ingredients 5 to 10 min. and top. Bake for a remaining 20 to 30 min.
