Sweet and easy. On a busy Thanksgiving day, it is nice to have a vegetable that doesn't need to be cooked in the oven or on the stovetop!

Recipe Ingredients for Smashed sweet potatoes with dried cranberries

3 pounds sweet potatoes, peeled and cut in 1/2 inch slices
1/4 cup apple juice
1/4 cup orange juice
1/4 cup brown sugar
1 salt and pepper to taste
1/3 cup cranberries, dried

Recipe Directions for Smashed sweet potatoes with dried cranberries

  1. Place the sweet potatoes slices in a lightly oiled 3 1/2 to 4 quart slow cooker. In a small bowl combine the juices and brown sugar and pour over the potatoes. Season with salt and pepper. Cover and cook on low for 6 hours, until the potatoes are tender.

  2. Just before serving, smash the potatoes with a potato masher until smooth. Fold in the cranberries and serve hot.
