Hearty winter soup, with italian flavors

Recipe Ingredients for Smashed pumpkin soup

1 tbsp olive oil
4 cloves garlic
1 tsp fennel seed
7 whole canned tomatoes
4 cups butternut squash
2 medium potatoes
16 oz low sodium chicken broth
1/2 cup shredded parmesan
4 oz mascarpone

Recipe Directions for Smashed pumpkin soup

  1. Crush garlic and fennel seeds. Sautee in olive oil until golden, about 3 minutes

  2. Crush canned whole tomatoes by hand and add to sautee pan. Cook until liquid just evaporates, about 5 minutes

  3. Add squash and potatoes. Simmer for 30 to 40 minutes, until soft.

  4. Mash all ingredients with a potato masher until mostly smooth. Add parmesan and mascarpone for a creamy finish.
