Recipe Ingredients for Smashed Peas with Pappardelle

8 ounces pappardelle
8 ounces frozen peas
115 grams firm tofu
1/2 t salt
1/4 t black pepper
20 grams grated parmesan

Recipe Directions for Smashed Peas with Pappardelle

  1. Cook pasta according to package directions.

  2. Thaw peas and pulse in food processor until chopped.

  3. Add tofu, salt, pepper, and parmesan. Pulse to combine.

  4. Drain pasta, reserving 1/4 C of pasta water. Return pasta to pot.

  5. Add pea puree and reserved pasta water. Toss.
