A healthy side dish that is full of color and easy. Based on a recipe out of Better Homes and Gardens (Feb '10)

Recipe Ingredients for Smashed Peas and Edamame

16 oz. frozen peas
12 oz. soybeans
1 tbsp. olive oil
4 cloves garlic, minced
2 tbsp. lemon juice
2 tsp. freshly ground black pepper
1/2 tsp. salt

Recipe Directions for Smashed Peas and Edamame

  1. In large pot cook peas and soybeans in a small amount of boiling water for 5 minutes or until tender. Drain; transfer to food processor and puree.

  2. In small skillet, heat oil over medium heat. Add garlic and cook until tender, 1 to 2 minutes. Stir into pureed peas along with lemon juice, pepper, and salt.
