because it sounded like a good idea when we found mustard greens at the farmers market, so we got some potatoes, too.

Recipe Ingredients for smashed greens and potatoes

6 cups chopped mustard greens (that's what I got from 1 bunch)
2 tbsp olive oil
1 tbsp balsamic vinegar
2 tsp lemon juice
2 tbsp lime juice
2 russet potatoes
1 serving earth balance margarine
7 oz tofu

Recipe Directions for smashed greens and potatoes

  1. coarsely chop potatoes and boil until soft.

  2. braise greens in olive oil. add vinegar and citrus juice.

  3. smash potatoes, tofu, and earth balance. use a bigger bowl than you think you need.

  4. mix greens into potatoes.
