Recipe Ingredients for Smashed chickpea salad

1 1/2 c cooked garbanzo beans
2 T black olives, Greek, chopped
1 T red onion, finely chopped
1 T parsley, chopped fresh
2 T lemon juice
1/4 t salt
1/4 t pepper
1 T olive oil

Recipe Directions for Smashed chickpea salad

  1. Mix all and lightly mash with the back of a fork. Add the olive oil (original recipe called for "a few glugs").

  2. If used on a sandwich, try accompanying with a slice of roasted red pepper or arugula (or other peppery leaves).
