Recipe Ingredients for Smashed Chickpea & Avocado Salad Sandwich

15 oz chickpeas
1 avocado
1/4 cup cilantro
1/2 green onion
2 tablespoons lime juice
1 Salt
1 pepper
2 slices whole wheat bread

Recipe Directions for Smashed Chickpea & Avocado Salad Sandwich

  1. Rinse and drain chickpeas. Remove shells, if desired.

  2. With a fork, smash chickpeas and avocado together in a medium bowl.

  3. Add cilantro, onion, and lime juice. Salt and pepper to taste.

  4. Optional: Add fresh spinach leaves, tomato, lettuce, or sprouts

  5. Spread salad on bread.
