Smashed Cauliflower Recipe

Great low carb side dish to replace potatoes. You can also use low-fat cream cheese to reduce calories/fat. (Use one whole cauliflower - estimated to be about three cups in recipe below.)

Recipe Ingredients for Smashed Cauliflower

3 cups cauliflower, cooked
1/4 cup Parmesan Cheese, grated
1 oz Philadelphia Cream Cheese
1 clove garlic, grated
1 tsp pepper (or less based on your preference)

Recipe Directions for Smashed Cauliflower

  1. NOTE: Use salt substitute for seasoning. I couldn't get the recipe tool to recognize it so I left it out of the ingredient list!)

  2. Cook the cauliflower in salted water (or use any method you prefer but don't overcook it).

  3. Drain liquid from the cauliflower and put it in a food processor

  4. Put remaining ingredients in food processor with the cauliflower and pulse until mixture is smooth

  5. Check and adjust seasoning as necessary.
