Lighter version of Twice Baked Potatoes

Recipe Ingredients for Small, Twice Baked Potatoes

24 oz Potatoes, Baked
2 tbs Sour Cream
1 tbs olive oil
1 tsp Grated Parmesan Cheese
3 egg yolks
1 salt and pepper to taste

Recipe Directions for Small, Twice Baked Potatoes

  1. Cut top off of baked small (3 oz) potatoes.

  2. Scoop out flesh from skins, mash well, cool slightly and add remaining ingredients.

  3. Return this filling to the skins and brush the tops with any remaining (or additional) egg yolk in the bowl.

  4. Bake at 400 degrees until lightly browned and puffed slightly.
