Recipe Ingredients for Smackeroni & Cheese

14 oz Evaporated Milk 2% M.F. Partly Skimmed
0.13 cup Wheat Flour, White, All-purpose, Enriched, Bleached
0.5 tsp Mustard Powder
8 oz Light Pasteurized Process Cheese Product
4 tbsp Parmesan, Grated Cheese
16 oz crumbled Chicken, ground, raw
1 cup, chopped Onions
0.5 cup, chopped Squash, Summer, Zucchini, Includes Skin
19 oz Diced Tomatoes
4 cup elbow shaped Macaroni, Whole-wheat, Cooked
2 oz Cheese Cheddar Mild Light

Recipe Directions for Smackeroni & Cheese

  1. In a medium, non stick pot, whisk together milk, flour, and mustard powder until smooth. Heat over medium high heat, whisking constantly, until mixture bubbles and thickens. Add Cheez Whiz, Parmesan, and1/4 tsp pepper. Remove from heat and set aside.

  2. In a deep, 10 inch skillet, cook meat, onions, garlic, and zucchini over medium high heat until meat is no longer pink. Drain any excess liquid. Stir drained tomatoes into meat and cook for one more minute.

  3. Add cooked pasta and cheese sauce. Mix well and cook until just heated through. Sprinkle grated cheddar over the macaroni mixture. Cover and let stand 5-10 minutes before serving.

  4. Serve hot with a sprinkle of freshly ground black pepper and a salad on the side.
