Recipe Ingredients for Slowcooker Chickpea Curry

1 tablespoon olive oil
1 1/2 cups chopped onion
1 cup chopped carrot
1 tablespoon curry powder
1 teaspoon brown sugar
1 teaspoon grated ginger
2 garlic cloves, minced
1 tbsp serrano chile
3 1/2 cups cooked chickpeas (garbanzo beans)
1 cup diced green bell pepper
1 cup (1-inch) cut green beans
1/4 teaspoon black pepper
1/8 teaspoon ground red pepper
14 ounce vegetable broth
3 cups fresh baby spinach
2 tablespoons Cream of Coconut
