Use 6 medium sized roma tomatos - CC counts 3 as one serving size, but I've counted .5 tomato one serving at 30 cals. Great when served on sliced provolone cheese or crackers - or by themselves!

Recipe Ingredients for Slow roasted tomatos

2 roma tomatos
2 tbsp olive oil
1 tbsp balsamic vinegar
2 tsp sugar

Recipe Directions for Slow roasted tomatos

  1. cut tomatos in half, scoop out seeds

  2. mix olive oil and vinegar together, brush liberally onto tomatos

  3. sprinkle with sugar

  4. slow roast in oven for at least 3 hours - 225 f
