Recipe Ingredients for Slow Roasted Tomato & Parmesan Pizza

1 cup Roma tomatoes, halved
3 tbsp olive oil
4 cloves garlic, peeled
153 7/10 ml flour
2.21 ml yeast
2.21 ml salt
70.97 ml salt
1/4 cup Parmesan, grated
1/4 cup Parmesan, shredded
2 tsp thyme

Recipe Directions for Slow Roasted Tomato & Parmesan Pizza

  1. 1. Slow roast tomatoes. See recipe for Slow Roasted Tomatoes for directions.

  2. 2. Take dough out of fridge, use fingers to stretch into round on parchment paper dusted with cornmeal. Let rise 10 minutes.

  3. 3. Preheat oven to 400 degrees with baking sheet, pizza stone or cast iron inside.

  4. 4. When oven is heated, slide pizza on parchment onto the preheated stone, cast iron pan or baking sheet. Close door quickly, bake 10 minutes or until puffed, not browned.

  5. 5. Remove dough from oven, slide off parchment paper and onto surface of stone.

  6. 6. Brush olive oil on crust, cover with thyme, then the crushed garlic and tomatoes. Top with grated parmesan, then shredded.

  7. 7. Put back in the oven for 15 - 20 minutes until bubbly and crust is brown.

  8. 8. Let stand 5 minutes before slicing.
