Here's an Italian-spin on plain old vegetable soup. I made it in a slow cooker but it can be simmered on the stove top just as well.

Recipe Ingredients for Slow Cooker Vegetable Soup

1 package (10 oz) Spinach
2 medium Carrots
2 stalk, medium (7-1/2" - 8" long) Celery
1 onion, large, chopped
1 clove Garlic
4 cup Organic Vegetable Broth
28 oz Tomatoes Diced
1 tsp, crumbled Bay Leaf
1 tbsp, ground Basil, Dried
1 tsp Oregano, Ground

Recipe Directions for Slow Cooker Vegetable Soup

Place all ingredients in a slow cooker; cover and cook on high power for 5 hours. Remove bay leaves, stir and serve. Yields about 1 cup per serving.
