This is a low calorie soup to help you get all the vegetables that you need. Makes plenty to allow for leftovers. Freezes well.

Recipe Ingredients for Slow Cooker Vegetable Soup

1 large onion, chopped
4 medium carrots, chopped
2 stalks celery, chopped
2 cloves garlic, minced
1/4 tsp (2) bay leaves
1 tsp oregano, dried
1/4 tsp salt
1 tsp curry powder
28 ounces diced tomatoes, low sodium
3 cups chicken broth, low sodium
19 ounces red kidney beans, drained and rinsed
2 leeks, chopped
1 medium sweet pepper, diced
1 small zucchini, chopped
1 cup corn, frozen
1 cup peas, frozen

Recipe Directions for Slow Cooker Vegetable Soup

  1. In slow cooker, combine onion, carrots, celery, garlic, bay leaves, oregano, salt and curry powder.

  2. Add tomatoes, broth, 2 cups of water and beans.

  3. Cover and cook on low for 5 hours.

  4. Add leeks and cook for another hour.

  5. Add green pepper, zucchini, corn and peas.

  6. Cover and cook on high for 20 minutes or until tender-crisp.

  7. Discard bay leaves.
