Recipe Ingredients for Slow Cooker Tortilla Soup

13 ounces skinless, boneless chicken breasts
1/2 teaspoon olive oil
1/2 teaspoon minced garlic
1/4 teaspoon ground cumin
32 ounces low sodium chicken broth
1 cup frozen corn kernels
1 cup chopped onion
1/2 teaspoon chili powder
1 tablespoon lemon juice
1 cup Chunky Salsa

Recipe Directions for Slow Cooker Tortilla Soup

  1. Dump everything in the slow cooker for about 7 hours.

  2. Before serving, take out the chicken breasts, shred them, and return them to the pot.

  3. Serve over crushed tortilla chips and sprinkle with shredded Monterrey Jack cheese (be sure to count those calories too).

  4. Yields approx. 10 cups, so each serving is approx. 2.5 cups.
