This is from Fresh from the Vegetarian Slow Cooker cookbook. You don't really need two tablespoons of bay leaves, just two bay leaves. It's really good, but more like a very thick tomato sauce than a soup. Adding a swirl of sour cream at the end makes it PERFECT.

Recipe Ingredients for Slow Cooker Tomato Soup

1 tablespoon olive oil
1 medium onion, chopped
1 clove garlic, minced
3 cups stock, vegetable
28 ounce tomatoes
1 tablespoon tomato paste
2 tablespoons bay leaves
1 teaspoon salt
1 teaspoon pepper

Recipe Directions for Slow Cooker Tomato Soup

  1. Heat up the oil and sauté the onion and garlic for about five minutes.

  2. Add the vegetables and everything else to the slow cooker.

  3. Cook on low for six to eight hours.

  4. Puree the resulting soup and serve!
