Recipe Ingredients for Slow Cooker Ratatouille

1 1/2 cups chopped onion
1 garlic clove, minced
1 tbsp. olive oil
6 oz. tomato paste
1 tbsp. sugar
1 tsp. dried basil, crushed
1/2 tsp. salt
1/2 tsp. dried thyme, crushed
1/4 tsp. pepper
20 oz. diced tomatoes
2 zucchini, halved, and sliced
1 eggplant, peeled and cubed

Recipe Directions for Slow Cooker Ratatouille

  1. Cook onion and garlic in olive oil until tender but not brown.

  2. Combine tomato paste, sugar, basil, salt, thyme, and pepper in slow cooker. Add tomatoes, zucchini, and eggplant. Stir in onion mixture.

  3. Cook on low for 10 to 12 hours on low or 5 to 5 1/2 hours on high. Stir before serving.

  4. Serves 8.
