Makes 8 servings



Pumpkin Oatmeal from the American Heart Association. Can be refrigerated for up to 3 days. Add a bit of milk when reheating.

Recipe Ingredients for Slow Cooker Pumpkin Oatmeal

1 cup Pure Pumpkin
2 cup Steel Cut Oats
8 oz Fat Free Half and Half
1 1/2 tbsp Cinnamon, Ground
4 oz Sugar Light Brown
3/4 tsp Nutmeg, Ground
1 cup (not packed) Raisins, Seedless
48 oz Water
1 tsp Vanilla Extract
1 cup Chopped Walnuts

Recipe Directions for Slow Cooker Pumpkin Oatmeal

  1. Spray 4 qt cooker with oil.

  2. Stir together oats, brown sugar, cinnamon and nutmeg. Stir in the pumpkin. Gradually stir in half and half and water, 1 cup at a time. Stir in the raisins and vanilla.

  3. Ladle mixture into slow cooker. Cook covered, on low, overnight or 7-8 hours. Serve topped with walnuts.
