Recipe Ingredients for Slow Cooker Potato Corn Chowder

8 Red Potatoes, 4 peeled, chopped into small pieces
1/2 leek, copped
4 cloves garlic, peeled and smashed
1 tsp. poultry seasoning
1 tsp. kosher salt
1/2 tsp. pepper
2 tsp. olive oil, divided
2 cups corn
2 carrots, chopped
8 tsp. light sour cream, if desired for garnish, divided
8 tbsp. Cheddar cheese, if desired for garnish, divided

Recipe Directions for Slow Cooker Potato Corn Chowder

  1. Combine potatoes, leek garlic, poultry seasoning, salt and pepper into slow cooker. Add enough water to cover. Cover, cook on high till potatoes are tender, about 5 hours.

  2. Meanwhile, preheat oven to 400. Arrange chopped carrot in one layer, drizzle with one teaspoon olive oil, and bake till outsides just begin to caramelize and carrots just become tender, 10-15 minutes. Remove from baking sheet. Repeat the same process with corn, 7-10 minutes.

  3. Drain excess water from potato mixture. Add half of mix to food processor, pulse till smooth and remove to a bowl. Repeat with next half of mixture, leaving small chunks of potato, if desired, for texture. Put all contents back into slow cooker, reduce slow cooker temperature to low, and add carrots and corn, heat through.

  4. Garnish each bowl with 1 tsp light sour cream and 1 tbsp cheddar cheese.
