Slow Cooker Polynesian Chicken (I double this recipe)

Recipe Ingredients for Slow Cooker Polynesian Chicken

3 lb chicken
2 red bell peppers
40 oz pineapple chunks
2 tablespoons lite soy sauce
2 clove garlic
1 teaspoon fresh ginger
2/3 cup honey
4 tablespoons cornstarch

Recipe Directions for Slow Cooker Polynesian Chicken

  1. Ingredients

  2. 4 chicken breasts, boneless, skinless (about 1.5 pounds), cut into 2" cubes

  3. 1 red bell pepper, cored and seeded, sliced into 1" strips

  4. 1 (20 ounce) can pineapple chunks, in natural juice

  5. 2 tablespoons Bragg Liquid Aminos (gluten free) or lite soy sauce

  6. 1 clove garlic, minced

  7. 1 teaspoon freshly grated ginger

  8. 1/3 cup honey

  9. 2 tablespoons cornstarch

  10. Directions

  11. Recommend using a 4-7 quart slow-cooker.

  12. Pour juice from canned pineapple chunks into a small mixing bowl. Add to juice, Bragg Liquid Aminos (or soy sauce), garlic, ginger and honey, whisk to combine. Add cornstarch and stir until combined. Place chicken in slow-cooker, add pineapple chunks. Pour pineapple mixture over chicken, cover and cook on low 4-5 hours.

  13. Add bell peppers the last 15 minutes of cook time.

  14. Serve chicken over a bed of quinoa or brown rice.
