Recipe Ingredients for Slow Cooker Mexican Chicken

15 oz Black Beans
1.25 cup Frozen Cut Corn
10 oz Diced Tomatoes and Green Chilies
1 slice, medium (1/8" thick) Onions
1 pepper Peppers, Jalapeno
1/2 cup Sauce, Ready-to-serve, Salsa
3 serving Ground Cumin
0.25 serving Fat Free Plain Yogurt
2 cup (8 fl oz) Water

Recipe Directions for Slow Cooker Mexican Chicken

  1. Spray or line a large crock pot. Prepare chicken by removing any fat it might have, and any dark spots in the meat. place in bottom of crock pot, and THEN turn the crock pot on high. (never turn on while you have nothing in it!)

  2. In medium mixing sized mixing bowl add the can of tomatoes (draining half of the can). Rinse black beans and add to bowl. Chop onion and jalapeno, and salsa and add to bowl. Add frozen corn. Add all spices and mix well. Add to cover chicken. Cook on high 8-10 hours (7 hours cooked my chicken through, I used slightly smaller breasts).

  3. On stove top bring 2 cups of water to a boil and add 2 cups of instant brown rice. Cook 5 minutes covered on low heat, remove and let sit 5 more minutes, then fluff with fork.

  4. 2/3 cup servings for the rice, 1 chicken breast and 1/4 of the "sauce" mix are 1 serving.
