Recipe Ingredients for Slow Cooker Mexican Beef and Bean Stew

1 1/2 lb beef stew meat, (such as chuck), trimmed and cubed
2 tablespoons all purpose flour
1 tablespoon extra virgin olive oil
1 cup onion, chopped
15 oz red beans, rinsed
15 oz canned corn
10 oz fat free low sodium beef broth
1 cup salsa
2 tablespoons chilli powder
1 teaspoon cumin
1/4 teaspoon garlic powder

Recipe Directions for Slow Cooker Mexican Beef and Bean Stew

  1. coat beef with flour.

  2. heat oil in skillet.

  3. add beef and cook until browned.

  4. place beef, onion, beans, corn, beef broth, salsa, chili powder, cumin, and garlic powder in crockpot.

  5. cover and cook on low for 8-10 hours or high for 4-5 hours.
