To add flavor, and change the nutrition info, use 2 cups of chicken broth or 1 c. chicken broth and 1 cup wine instead of the water.

Recipe Ingredients for Slow Cooker Lamb Shank

1 1/2 lb lamb shank
14 oz tomatoes, canned diced
1 medium tomato, chopped
3 tsp bay leaves
2 tsp oregano
2 tsp fennel
1 cup onion, sliced
3/4 cup mushroom, portobello, cubed
1 cup celery, diced large
2 cups water

Recipe Directions for Slow Cooker Lamb Shank

Put all ingredients in a slow cooker. Set for 6-8 hours. Watch the cooking - you might need to add water or about 2 cups chicken broth (which will change the nutrition analysis) as the cooking continues. If you want, adding wine is also nice but, again, that will change the nutrition analysis. Also, I don't use salt in cooking (low sodium diet) but I add plenty of pepper and adjust the other seasonings as the cooking progresses.
