Made in the slow cooker, use to fill tacos for a nice change from plain chicken. I serve in whole wheat tacos shells topped with shredded cabbage.

Recipe Ingredients for Slow Cooker Cilantro Lime Chicken

16 oz Fiesta Salsa, Medium or Mild
30 oz Boneless Skinless Breast Fillets
1 oz Old El Paso Seasoning Mix Taco
1 lime yields Lime Juice
1 medium (2-1/2" dia) Onions
1 small Peppers, Sweet, Green
1.764 oz Cilantro

Recipe Directions for Slow Cooker Cilantro Lime Chicken

Place the salsa, taco seasoning, lime juice, and cilantro into a slow cooker, and stir to combine. Add the chicken breasts, and stir to coat with the salsa mixture. Add diced onion. Add diced pepper when one hour of cooking time remains. Cover the cooker, set to High, and cook until the chicken is very tender, about 4 hours. If desired, set cooker to Low and cook 6 to 8 hours. Shred chicken with 2 forks to serve.
