Adapted from Cooking Pleasures magazine to serve 2 and be lower in calories and fat.

Recipe Ingredients for Slow cooker chicken and wild rice stew

8 oz. boneless skinless chicken breast
2 cups butternut squash, diced
1/2 cup celery, chopped
1/2 cup onion, chopped
1 cup mushrooms, sliced
3/4 cup wild rice
2 cups chicken broth
1 teaspoon thyme
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup plain nonfat yogurt

Recipe Directions for Slow cooker chicken and wild rice stew

  1. Add all ingredients to slow cooker except yogurt. Cook on low about 6 hours to let wild rice cook fully.

  2. Add yogurt just before serving. (I use Greek strained yogurt because its just as thick as sour cream or creme fraiche, look for it in health food stores under the name Fage.)

  3. It should be nice and thick, but if it needs it, you can add cornstarch, just don't forget to count the calories.

  4. Also, original recipe calls for cubed canadian bacon or smoked ham. If you want this smoky flavor without the calories and fat, add a couple drops liquid smoke.
