From all recipes. Make in a slow cooker. Instead of all the seasoning at the end, you can use a package of taco seasoning but it will up the sodium a lot.

Recipe Ingredients for Slow Cooker Chicken Tortilla Soup

1 onion, chopped
16 ounce pinto beans, drained
15 ounce black beans, drained
1 cup whole kernel corn
8 ounce tomato sauce
10 oz low sodium chicken broth
1/2 cup water
20 ounce diced tomatoes with green chilies, undrained
450 g skinless, boneless chicken breasts
1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1/4 tsp dried oregano
1/2 tsp paprika
1 1/2 tsp ground cumin
1 tsp black pepper
1 tsp cilantro

Recipe Directions for Slow Cooker Chicken Tortilla Soup

  1. Place the onion, chili beans, black beans, corn, tomato sauce, beer, and diced tomatoes in a slow cooker.

  2. Add seasonings, and stir to blend. Lay chicken breasts on top of the mixture, pressing down slightly until just covered by the other ingredients.

  3. Set slow cooker for low heat, cover, and cook for 5 hours.

  4. Remove chicken breasts from the soup, and allow to cool long enough to be handled. Stir the shredded chicken back into the soup, and continue cooking for 2 hours.

  5. Serve topped with shredded Cheddar cheese, a dollop of sour cream, and crushed tortilla chips, if desired.
