Recipe Ingredients for Slow Cooker Chicken

1 1/2 pounds roasted chicken, boneless, skinless, net from 4 lb fresh whole chicken
1 tsp lemon pepper
1 medium onion, cut into 6 wedges
2 cups (baby) carrots, cut in half
3 medium russet potatoes, cut into 1 1/2-inch chunks (11353)
3 cloves garlic, smashed
2 cups low fat low sodium chicken broth, from the slow cooker, includes the starter cupful (105273)
1/4 cup water
2 tbsp cornstarch

Recipe Directions for Slow Cooker Chicken

  1. Rinse chicken and pat dry. Sprinkle inside and outside of chicken with lemon pepper. Place chicken in a large slow cooker.

  2. Place onions, carrots, potatoes and garlic around chicken. Add 1 cup canned chicken broth to bottom of cooker. Cover and cook on HIGH for 6-7 hours.

  3. Suction juice out of slow cooker and transfer to a small saucepan (approximately 2 cups). Skim off fat.

  4. In small bowl, whisk cornstarch and 1/4 cup cold water to create a slurry. Whisk the cornstarch slurry into the juices. Bring to a boil. Boil 1 minute.

  5. Serve chicken with carrots, potatoes and gravy.
