Hearty and low calorie soup. Better than any hearty soup available in the store and has no "fillers."

Recipe Ingredients for Slow Cooker Cabbage/Bean Soup

3 garlic cloves
2 cups cabbage
2 carrots
1 potato
1 onion
1 cup dry beans
3 chicken boullion cubes
1 cup cooked chicken
3 tablespoons cilantro
1/4 teaspoon Bay Leaves

Recipe Directions for Slow Cooker Cabbage/Bean Soup

  1. Soak beans overnight. (I soak them in my slow cooker (turned off) - eliminates any additional dishes). Drain water in morning.

  2. Now cook beans in slow cooker till they become soft. Then add the following to the slow cooker.

  3. Crushed garlic.

  4. Chopped cabbage.

  5. Shred or chop carrots. (I prefer shredding)

  6. Shred or cube potatoes

  7. Chop onion.

  8. Chop cooked chicken to your liking.

  9. Cilantro - add more or less depending on your taste.

  10. Bay Leaves (I put them in a tea strainer - makes it easy to find later).

  11. Now add enough water to cover all.

  12. Now soften boullion cubes in hot water and add to pot. If you don't like it too salty - perhaps start with just one cube and keep adding during the cooking process till your taste buds are happy.

  13. Stir to mix thoroughly.

  14. This can be a great vegetarian soup if you leave out the chicken and substitute salt for chicken cubes.

  15. Cook until beans are completely soft and all veggie are done and flavors mingle together.
