Delicious and easy butternut squash soup.

Recipe Ingredients for Slow Cooker Butternut Squash Soup

1 cup, cubes Squash, Winter, Butternut
1 tbsp chopped Onions
1 1tsp Vegetable Oil, Canola
3 tsp packed Sugars, Brown
0.125 cup (8 fl oz) Water
4 cup (8 fl oz) Water

Recipe Directions for Slow Cooker Butternut Squash Soup

  1. Add water to crock pot. Wash butternut squash and put in crock pot. Cover with lid and cook on low 7-9 hours.

  2. Saute onion in oil.

  3. Cool squash. Scoop out seeds. Place half of squash in blender with half of onions and 2 cups of water.

  4. Blend well.

  5. Pour into crock pot and repeat with remaining squash/onions/water.

  6. Season with brown sugar, and salt and pepper to taste.

  7. Cook on high until warmed through.

  8. Great with pumpkin seeds or croutons as a topping. Also great as a topping for pasta.
