Recipe Ingredients for Slow Cooker Black Bean Soup w/chorizo

5.5 oz Chorizo, Pork And Beef
1 cup, chopped Onions
3 clove Garlic
2 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Green
1.5 oz Sherry
2 tsp Cumin
2 tsp, crumbled Bay Leaf
450 grams Black Beans
2 cup Chicken Broth
1 fruit (2" dia) Limes
1/4 cup Coriander Leaves

Recipe Directions for Slow Cooker Black Bean Soup w/chorizo

  1. Discard chorizo skin. Crumble meat and brown in 12-inch nonstick skillet for 2 mins.

  2. Add onion, garlic and peppers. Saute over med-high 5 mins.

  3. Add to slow cooker. Add sherry, cumin, bay leaf, beans and broth.

  4. Cover and cook on low for 4 - 5 hrs.

  5. Remove lid. Scoop out 1 cup beans and press with the back of a fork to mash. Return to pot. Add lime juice, cilantro, salt and pepper. Simmeruncovered to warm through.

  6. Approx 1 cup per serving.
