The leanest version I could come up with for the slow cooker. The beef I approximated calorically because I trimmed off ALL the fat.

Recipe Ingredients for Slow Cooker Beef Stew

39 oz Beef, Round, Eye Of Round
3 cup Potatoes, Boiled
3 carrot (7-1/2") Carrots
3 cup Beef Stock
1/2 medium (2-1/2" dia) Onions

Recipe Directions for Slow Cooker Beef Stew

  1. 1. Cut everthing except the onion into cubes.

  2. 2. Chop onion and a clove of garlic.

  3. 3. Add salt, pepper, paprika, a bay leaf, and Worchestershire sauce.

  4. 4. Place with beef stock in slow cooker and let it go on low for 12 hours.
