A simple way to take a bunch of easily prepared ingredients to make a hearty and satisfying dinner. You could easily cut the amount if meat in half to save calories. Make it first thing in the morning, turn it on and forget it.

Recipe Ingredients for Slow Cooker Beef Burgundy

2 lb beef stew meat
16 oz potato
14 oz carrot
8 ounce onion
2/3 cup Burgundy wine
1/3 cup water
1 tbsp cornstarch
1 tbs butter
3 tbs flour
4 oz broth
4 oz 1% milk
6 oz mushrooms (chopped and sauteed)

Recipe Directions for Slow Cooker Beef Burgundy

  1. Coat large skillet lightly with cooking spray.

  2. Cut up large pieces of meat, if necessary, and cook over medium heat in two batches, until brown.

  3. Drain fat.

  4. Set aside.

  5. Place frozen vegetables in 4-quart or larger slow cooker.

  6. Top with meat.

  7. Mix soup (see below), wine, water and cornstarch in large bowl.

  8. Pour over meat and vegetables in cooker.

  9. Cover. Cook on low 7 to 9 hours.

  10. Home made/healthier condensed mushroom soup:

  11. Melt butter in a saucepan over Med-Low heat.

  12. Stir in flour a little at a time until smooth, then remove from heat.

  13. Add broth and milk a little at a time, stirring to keep mixture smooth. Then, stir in mushrooms.

  14. Return to heat and bring sauce to a gentle boil; stir constantly until sauce thickens.
