A hearty meal, relatively low-cal for this type of recipe. This recipe is adapted from the book "eat great, lose weight", p.152.

Recipe Ingredients for Slow-cooked pork stew

2 lbs pork loin, chopped into 1" cubes
3 large potatoes, chopped into 1" cubes
1 lb baby carrots
2 onions, cut into wedges
2 1/2 cups vegetable juice
3 cloves garlic
1 t salt
2 tsp ground pepper
1 tsp dried thyme
2 T brown sugar
1 T mustard
4 tsp tapioca

Recipe Directions for Slow-cooked pork stew

  1. Place pork in a slow cooker. Add carrots, potatoes, onions, garlic, pepper, thyme, and salt.

  2. In a medium bowl, combine vegetable juice, brown sugar, mustard, and tapioca. Pour over meat and vegetables.

  3. Cover and cook on low 6 hours or high 4 hours. (Or bake in a covered casserole for 5 hours at 275 F without disturbing.)
