Recipe Ingredients for Slow-Cooked Chile Con Carne

1 tsp canola oil
2 cups onion, chopped
2 garlic cloves, minced
3/4 pound bottom round, cut into 1-inch cubes
45 ounces diced tomato
1 tablespoon chili powder
2 teaspoons ground cumin
1 teaspoon dried oregano
1 cup red kidney beans, cooked, drained (or 3.5 cups canned)
6 ounces Beef Broth

Recipe Directions for Slow-Cooked Chile Con Carne

  1. Heat a large nonstick skillet over medium-high heat.

  2. Coat pan with oil.

  3. Add onion, garlic, and beef to pan; cook 5 minutes or until beef is browned, stirring occasionally.

  4. Combine beef mixture and all other ingredients in an electric slow cooker.

  5. Cover and cook on HIGH for 3 1/2 hours or until beef is tender.

  6. Uncover; cook 30 minutes or until slightly thickened.
