A lovely, low-fat, low-cal soup to fill you up with the warmth of delicious veg and chicken.

Recipe Ingredients for Slow Cooked Chicken & Veg Soup

1 tbsp vegetable oil
240 g Onion, finely chopped
184 g Leeks, finely chopped
10 g Garlic, finely chopped
328 g Carrots, sliced
256 g Swede, cubed
500 g Potato, peeled and cubed
132 g chicken leg, roasted
10 g Stock Cube, vegetable - Knorr
10 g Stock Cube, chicken - Knorr
40 fl. oz boiling water

Recipe Directions for Slow Cooked Chicken & Veg Soup

  1. I used the leg meat from 2 chicken legs I had left over from a roast, but you can use whatever meat you prefer.

  2. Peel and prepare all the vegetables before you start.

  3. Place 1 tablspoon of vegetable oil in a large saucepan, over a low-to mid heat.

  4. Place the chopped onion, leek and garlic in it, and stir slowly until sweated through - do not brown unless you prefer it.

  5. Place the rest of the prepared vegetables in with the onions, and mix through.

  6. Put the two stock cubes into the 40fl. oz of boiling water, stir through until dissolved, then add the stock mix to the saucepan. Stir through.

  7. If you wish, add whatever herbs you prefer to the mix now.

  8. Take the meat from the chicken legs, cube, then add to the soup.

  9. Season to taste.

  10. Turn on your slow-cooker to Low.

  11. Place all the soup into the slow-cooker. This will fill 3.5 Litres.

  12. Cook on low for 8-9 hours or, if prefered, 4-5 hours on High.

  13. Put on lid
