Recipe Ingredients for Slow Cooked Beef and Red Lentil

426 g Beef Steak, Lean
304 g Potatoes, small, unpeeled, halved
234 g Carrots, diced small
168 g Swede, diced small
72 g Leek, diced small
72 g Onion, diced small
400 g Tomatoes, canned, chopped
26 g Garlic, fine chopped
100 g Red Lentils
2 tbsp Worcestershire Sauce
1 1/2 tbsp Vegetable Oil
1 tbsp Tomato Puree
2 stock cubes
1 pinch dried mixed herbs
1 pinch Black Pepper
1 pinch Salt
2 pints Water, Boiling (40 fl.oz)

Recipe Directions for Slow Cooked Beef and Red Lentil

  1. Prepare the vegetables as per the ingredients list.

  2. Put 1 tablespoon of vegetable oil in a large saucepan, then add the onion, garlic and leek.

  3. Cook over a low heat until the onion is translucent - about 5-10 minutes.

  4. Add the dried herbs, and stir, then add the potatoes, carrots and swede, and cook slowly for another 10-15 minutes.

  5. Add the tin of chopped tomatoes, and the tomato purée, and stir.

  6. Dissolve the 2 stock cubes in 2 pints of boiling water, then pour into the saucepan.

  7. Add the 2 tablespoons Worcestershire Sauce, and then the red lentils, and stir.

  8. Bring the saucepan up to the boil, and then simmer for 15-20 minutes.

  9. While the casserole is simmering, brown the beef pieces in 1/2 tablespoon of oil, in small batches, adding them to the saucepan as they are browned.

  10. Once all the meat is done, and the food has simmered for 20 minutes, ladle it into the pre-heated slow cooker, on High.

  11. Cook for 6 hours on High, or 8-10 hours on Low.
