A quick to prepare slow cooked recipe that can be left to get on with itself. The vegetables can be varied to suit what is in the store cupboard.

Recipe Ingredients for Slow cook sausage casserole

150 g pork sausages (two regular)
52 g lentils (puy)
90 g onions
80 g celery
160 g carrots
125 g parsnip
1 tablespoon flour
1 teaspoon mustard powder
1 stock cube (beef)
3/4 litre water

Recipe Directions for Slow cook sausage casserole

  1. Cut sausages into about 1.5 inch pieces and fry without fat in non-stick pan until browned and some fat has run out.

  2. Make up stock cube and mustard powder with .5 litre boiling water

  3. Put all ingredients in a slow cooker, add the stock (adding more water to cover)

  4. Cook on high heat until just simmering then turn down to medium/low.

  5. Cook for at least 3 hours, but can be left for up to 6

  6. Can be served on its own or with small jacket potato
