Healthy alternative to your standard sloppy joe. It can also be used as a filling for casadillas.

Recipe Ingredients for Sloppy salsa joes

1 lb ground turkey
1/2 cup chopped onion
2 cloves garlic, minced
1 cup zucchini, chopped
1 cup yellow squash, chopped
1 cup fresh mushrooms, sliced
3/4 cup green sweet pepper, chopped
16 oz salsa
1 teaspoon dried basil
1/2 teaspoon dried parsley flakes
1/2 teaspoon dried rosemary, crushed

Recipe Directions for Sloppy salsa joes

Cook ground turkey, onion and garlic over medium high heat until meat is cooked. drain off fat. stir in zucchini, squash, mushrooms,and sweet pepper. Cook, covered, over low heat for 5 to 7 minutes or until veggies are tender. Stir in salsa and herbs. Bring to a boil, reduce heat. Simmer, uncovered, about 10 minutes or until most of the liquid has evaporated. Serve either on buns or in tortillas.
